Rinse and sort black-eyed peas, removing any debris.
Place peas, ham hock, onion, garlic, broth, and bay leaves in large pot.
Bring to boil, then reduce heat and simmer 1-1.5 hours until peas are tender.
Remove ham hock, shred meat, and return to pot.
Add thyme and cayenne. Season with salt and pepper.
Simmer 15 more minutes to blend flavors.
Remove bay leaves and serve with hot sauce.
