Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup buttermilk
  • 1 lb breakfast sausage
  • 1/3 cup all-purpose flour (for gravy)
  • 3 cups whole milk
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

Preheat oven to 450°F. Mix flour, baking powder, and salt in a large bowl.

Cut in cold butter until mixture resembles coarse crumbs.

Stir in buttermilk until just combined. Turn onto floured surface and knead gently 3-4 times.

Pat dough to 3/4-inch thickness. Cut with biscuit cutter and place on baking sheet .

Bake 12-15 minutes until golden brown.

Meanwhile, brown sausage in a large skillet over medium heat, breaking into crumbles.

Sprinkle flour over sausage and stir for 1 minute.

Gradually add milk, stirring constantly. Bring to a simmer.

Cook until thickened, about 5 minutes. Season with pepper and salt.

Split warm biscuits and ladle gravy generously over top. Serve immediately.

For extra flaky biscuits, freeze your butter for 15 minutes before cutting it into the flour, and don't overwork the dough.
