Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 1/3 cup melted butter
  • 2 tablespoons vegetable oil

Instructions

Preheat oven to 425°F. Place oil in a 10-inch cast-iron skillet and heat in oven.

Mix cornmeal, flour, sugar, baking powder, and salt in a large bowl.

Whisk together buttermilk, eggs, and melted butter.

Pour wet ingredients into dry ingredients and stir until just combined.

Carefully pour batter into hot skillet.

Bake 20-25 minutes until golden brown and a toothpick comes out clean.

Let cool 5 minutes before slicing.
