  • 2 cups sugar
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons butter
  • 2 cups pecan halves
  • 1 teaspoon vanilla extract

Instructions

Line a baking sheet with parchment paper.

In a large heavy saucepan, combine sugar, buttermilk, baking soda, and salt.

Bring to a boil over medium heat, stirring constantly. The mixture will foam up.

Continue cooking, stirring frequently, until mixture reaches 236°F (soft ball stage).

Remove from heat and stir in butter, pecans, and vanilla.

Beat with a wooden spoon for 2-3 minutes until mixture begins to thicken and loses its gloss.

Working quickly, drop by spoonfuls onto prepared baking sheet . Let cool completely.
