Ingredients
Shop the tools- 1/2 lb ground pork
- 1/2 lb chicken livers, finely chopped
- 1 large onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 cups long-grain white rice
- 3 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
Cook ground pork in large skillet over medium-high heat, breaking up with spoon.
Add chicken livers and cook until no longer pink.
Add onion, bell pepper, and celery. Cook until vegetables are softened.
Stir in garlic and cook 1 minute.
Add rice and stir to coat with meat mixture.
Pour in broth and add Cajun seasoning, thyme, and cayenne.
Bring to boil, reduce heat, cover, and simmer 20 minutes.
Remove from heat and let stand covered 5 minutes.
Fluff with fork, season with salt and pepper, and garnish with green onions.
