Ingredients

  • 4 lbs sweet potatoes
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 1/4 cup orange juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups mini marshmallows

Instructions

Preheat oven to 350°F. Peel and slice sweet potatoes into 1/2-inch rounds.

Boil sweet potatoes 10 minutes until just tender. Drain.

Arrange sweet potatoes in greased 9x13-inch baking dish.

Mix brown sugar, melted butter, orange juice, cinnamon, nutmeg, salt, and vanilla.

Pour mixture over sweet potatoes.

Cover with foil and bake 30 minutes.

Remove foil, top with marshmallows.

Bake 10-15 more minutes until marshmallows are golden and toasted.
