Ingredients
Shop- 3 lbs chicken pieces (thighs and drumsticks)
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons vegetable oil
- 1 large onion, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 4 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 bay leaves
- 1 teaspoon thyme
- 1/4 cup fresh parsley, chopped
Instructions
Season chicken with salt and pepper, then dredge in flour.
Heat oil in a large Dutch oven . Brown chicken on all sides, about 10 minutes. Remove and set aside.
Add onion, celery, and bell pepper to the pot. Sauté 8 minutes until softened.
Add garlic and cook 1 minute. Sprinkle in remaining flour and stir for 2 minutes.
Gradually add chicken broth, stirring constantly. Add bay leaves and thyme.
Return chicken to the pot. Bring to a simmer, cover, and cook 30 minutes.
Stir in heavy cream and cook 5 more minutes. Remove bay leaves, garnish with parsley, and serve over rice.
