Ingredients

  • 4 cups green tomatoes, diced
  • 2 cups cabbage, chopped
  • 1 cup onion, diced
  • 2 bell peppers, diced
  • 1/4 cup salt
  • 2 cups apple cider vinegar
  • 1 1/2 cups sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery seeds
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon red pepper flakes

Instructions

Combine vegetables in a large bowl and toss with salt. Let stand 2 hours.

Rinse vegetables thoroughly and drain well.

In a large pot, combine vinegar, sugar, mustard seeds, celery seeds, turmeric, and red pepper flakes.

Bring to a boil, stirring until sugar dissolves.

Add vegetables and return to a boil. Reduce heat and simmer 10 minutes.

Pack hot relish into sterilized jars, leaving 1/2-inch headspace.

Process in boiling water bath 10 minutes for long-term storage, or refrigerate up to 3 months.
