Ingredients
Shop- 6 bone-in chicken thighs
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 3 tablespoons vegetable oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon thyme
- 1 can (28 oz) diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup raisins
- 1/2 cup slivered almonds, toasted
- Cooked white rice for serving
Instructions
Season chicken with salt and pepper, dredge in flour.
Brown chicken in oil in large skillet, about 4 minutes per side. Remove and set aside.
Add onion and bell pepper to skillet, sauté until softened.
Add garlic, curry powder, and thyme. Cook 1 minute.
Stir in tomatoes and broth, bring to simmer.
Return chicken to skillet, add raisins.
Cover and simmer 30-35 minutes until chicken is cooked through.
Sprinkle with toasted almonds.
Serve over white rice with extra sauce.
Chef's Comfy Tip
Toast the almonds in a dry skillet for a few minutes - it really enhances their flavor!
