  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cups buttermilk
  • 2 eggs, beaten
  • 1/4 cup melted bacon grease or butter
  • 1 cup pork cracklins, chopped
  • 2 tablespoons bacon grease for pan

Instructions

Preheat oven to 425°F. Place a 10-inch cast iron skillet in oven with 2 tablespoons bacon grease.

Mix cornmeal, flour, sugar, baking powder, and salt in large bowl.

Whisk together buttermilk, eggs, and 1/4 cup melted grease.

Stir wet ingredients into dry ingredients until just combined.

Fold in chopped cracklins.

Carefully remove hot skillet from oven and pour in batter.

Bake 20-25 minutes until golden brown and a toothpick comes out clean.

Let cool 5 minutes, then slice and serve warm with butter.
