  • 1 1/2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 eggs, beaten
  • 1 1/4 cups buttermilk
  • 1/4 cup melted bacon grease or butter
  • 1 cup pork cracklings, chopped
  • 2 tablespoons bacon grease for pan

Instructions

Preheat oven to 425°F. Place a 10-inch cast iron skillet with 2 tablespoons bacon grease in the oven.

In a large bowl, whisk together cornmeal, flour, baking powder, salt, and baking soda.

In another bowl, combine eggs, buttermilk, and melted bacon grease.

Pour wet ingredients into dry and stir until just combined. Fold in cracklings.

Carefully remove hot skillet from oven and pour in batter.

Bake 20-25 minutes until golden brown and a toothpick comes out clean.

Let cool 5 minutes before cutting into wedges and serving.
