Line baking sheets with parchment paper.
Combine sugar, corn syrup, and water in saucepan.
Cook to hard ball stage (260°F), without stirring.
Meanwhile, beat egg whites to stiff peaks.
Slowly pour hot syrup into egg whites while beating constantly.
Continue beating until mixture holds its shape and loses its gloss (about 5 minutes).
Stir in vanilla and pecans.
Drop by spoonfuls onto prepared sheets.
Let set at room temperature until firm.
