Ingredients
Shop- 1 lb dried great northern beans
- 1 smoked ham hock
- 2 cups diced ham
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
- Fresh parsley
Instructions
Rinse and sort beans.
Place beans, ham hock, onion, carrots, celery, garlic, broth, and bay leaves in large pot.
Bring to boil, then simmer 2-3 hours until beans are very tender.
Remove ham hock, shred meat, and return to pot.
Add diced ham and thyme.
Mash some beans against side of pot to thicken soup.
Season with pepper and salt.
Remove bay leaves and garnish with parsley.
