Mix cornmeal, flour, baking powder, salt, black pepper, and cayenne in a bowl.
Stir in diced onion.
Add wet ingredients to dry ingredients and stir until just combined.
Heat 2 inches of oil to 375°F in a deep pot.
Drop batter by rounded tablespoons into hot oil.
Fry 2-3 minutes, turning once, until golden brown all over.
Drain on paper towels and serve hot.

Use two spoons to drop the batter - one to scoop and one to push it off into the oil for perfectly shaped hush puppies.
