  • 1 1/2 cups cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 1/3 cup melted butter
  • 1 cup shredded cheddar cheese
  • 2 jalapeños, seeded and diced
  • 1 can (8 oz) creamed corn

Instructions

Preheat oven to 400°F. Grease a 9x13-inch baking pan.

Mix cornmeal, flour, sugar, baking powder, and salt.

Whisk together buttermilk, eggs, and melted butter.

Pour wet ingredients into dry ingredients and stir until just combined.

Fold in cheese, jalapeños, and creamed corn.

Pour into prepared pan.

Bake 25-30 minutes until golden and a toothpick comes out clean.

Let cool 10 minutes before cutting.

Adjust the heat by using more or fewer jalapeños, and leave some seeds in if you like it extra spicy.
