Preheat oven to 350°F. Grease three 9-inch round cake pans.
Cream 1 cup butter and 2 cups sugar until fluffy.
Sift together flour, baking powder, and salt.
Add to butter mixture alternately with milk and vanilla.
Beat egg whites until stiff peaks form, fold into batter.
Divide among pans and bake 20-25 minutes. Cool completely.
For filling, beat egg yolks and 1 cup sugar in saucepan.
Add 1/2 cup butter and cook over medium heat until thickened.
Remove from heat, stir in bourbon, raisins, pecans, and coconut.
Spread filling between layers and frost with your favorite frosting.
