Ingredients

  • 6 large russet potatoes, peeled and diced
  • 8 slices bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 4 tablespoons butter
  • 1/4 cup flour
  • Salt and pepper
  • Green onions for garnish

Instructions

Cook bacon until crispy. Remove and set aside.

Sauté onion in bacon drippings until soft. Add garlic, cook 1 minute.

Add potatoes and broth. Bring to boil, then simmer 15 minutes until potatoes are tender.

Mash some potatoes against side of pot to thicken.

In separate pan, melt butter, whisk in flour, cook 1 minute.

Gradually add milk and cream to flour mixture, whisking until smooth.

Add cream mixture to soup, stirring well.

Stir in sour cream and cheese until melted.

Season with salt and pepper.

Serve topped with bacon, extra cheese, and green onions.
