Ingredients

Shop
  • 2 cups sugar
  • 1 cup brown sugar
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 2 cups pecan halves
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

1

Line baking sheets with parchment paper.

2

Combine sugars, cream, and butter in heavy saucepan.

3

Cook over medium heat, stirring, until mixture reaches 238°F (soft ball stage).

4

Remove from heat and stir in pecans, vanilla, and salt.

5

Beat with wooden spoon until mixture begins to thicken and lose its gloss (about 2 minutes).

6

Quickly drop by spoonfuls onto prepared baking sheets.

7

Let cool completely until set.

8

Store in airtight container.

Chef's Comfy Tip

Work quickly once you start dropping the pralines - they set up fast! If the mixture gets too thick, add a splash of hot water.
