Ingredients

  • 3 lb pork shoulder roast
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 jars (32 oz each) sauerkraut, drained
  • 1 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon caraway seeds
  • 2 bay leaves
  • 1 teaspoon paprika

Instructions

Preheat oven to 325°F. Season pork generously with salt and pepper.

Heat oil in a large Dutch oven . Brown pork on all sides, about 10 minutes. Remove.

Add onion to the pot and sauté 5 minutes. Add garlic and cook 1 minute.

Spread half the sauerkraut in the pot. Place pork on top, then cover with remaining sauerkraut.

Pour chicken broth over everything. Sprinkle with brown sugar, caraway seeds, and paprika. Add bay leaves.

Cover and bake 3 hours until pork is fall-apart tender.

Remove bay leaves. Shred pork and mix with sauerkraut. Serve with mashed potatoes.
