Ingredients
Shop the tools- 1/2 cup vegetable oil
- 1/2 cup flour
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups seafood stock
- 1 lb shrimp, peeled
- 1 lb lump crab meat
- 1 pint oysters with liquid
- 2 cups sliced okra
- 2 bay leaves
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- Cooked rice
- Green onions and filé powder
Instructions
Make dark roux with oil and flour, stirring constantly 20-30 minutes.
Add onion, bell pepper, and celery. Cook 5 minutes.
Add garlic and cook 1 minute.
Add bay leaves, Cajun seasoning, and thyme. Simmer 30 minutes.
Add okra and simmer 15 minutes.
Add shrimp and cook 3 minutes.
Add crab and oysters with liquid. Cook 5 more minutes.
Remove bay leaves and serve over rice with green onions and filé.

Add the seafood at the end and don't overcook - shrimp and oysters get tough if they simmer too long.
