Ingredients
Shop- 1 lb smoked sausage, sliced
- 4 medium potatoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- Salt and pepper
- Fresh parsley
Instructions
Heat oil in a large cast-iron skillet over medium-high heat.
Add potatoes, season with salt, pepper, and paprika.
Cook 10-12 minutes, stirring occasionally, until golden.
Add sausage and cook 5 minutes until browned.
Add bell peppers and onion, cook 5 minutes until softened.
Add garlic and cayenne, cook 1 minute.
Toss everything together and cook 2 more minutes.
Garnish with fresh parsley and serve hot.
