Ingredients

  • 6 large bell peppers (any color)
  • 1.5 lbs ground beef
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper

Instructions

Preheat oven to 350°F. Cut tops off peppers and remove seeds.

Blanch peppers in boiling water 5 minutes. Drain.

Brown ground beef with onion and garlic. Drain fat.

Stir in rice, diced tomatoes, half the tomato sauce, Italian seasoning, salt, and pepper.

Add 1 cup cheese to beef mixture.

Stuff peppers with beef mixture and place in baking dish.

Pour remaining tomato sauce around peppers.

Cover with foil and bake 30 minutes.

Remove foil, top with remaining cheese, bake 10 more minutes.

Choose peppers that can stand upright on their own - if they wobble, slice a thin piece off the bottom to create a flat base.
