Ingredients

  • 1 pre-made pie crust
  • 4 large ripe tomatoes, sliced
  • 1 teaspoon salt
  • 6 strips bacon, cooked and crumbled
  • 1/2 cup fresh basil, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3/4 cup mayonnaise
  • 2 green onions, chopped
  • 1/4 teaspoon black pepper

Instructions

Preheat oven to 350°F. Press pie crust into 9-inch pie pan and pre-bake 10 minutes.

Place tomato slices on paper towels, sprinkle with salt, and let drain for 15 minutes.

Layer half the tomatoes in the crust, top with half the bacon and basil.

Repeat layers with remaining tomatoes, bacon, and basil.

Mix cheeses, mayonnaise, green onions, and pepper in a bowl.

Spread cheese mixture over the top of the pie.

Bake 30-35 minutes until golden and bubbly.

Let cool 10 minutes before slicing. Serve warm or at room temperature.
