Ingredients
Shop- 6 boneless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 oz mushrooms, sliced
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- 3 cups cooked white rice
- Fresh parsley for garnish
Instructions
Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat.
Cook chicken 6-7 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, melt butter and sauté mushrooms until golden, about 5 minutes.
Sprinkle flour over mushrooms and stir for 1 minute.
Simmer until thickened, about 5-7 minutes. Season to taste.
Slice chicken and serve over rice, topped with mushroom gravy and parsley.

Use a meat thermometer - chicken is done at 165°F internal temperature.
