Ingredients

  • 4 cube steaks (6 oz each)
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 eggs
  • 1/2 cup milk
  • Vegetable oil for frying
  • 4 tablespoons butter
  • 1/3 cup flour (for gravy)
  • 3 cups whole milk (for gravy)
  • 1 teaspoon white pepper

Instructions

Pound steaks to 1/4-inch thickness if needed.

Mix flour, salt, black pepper, paprika, and garlic powder.

Whisk eggs and milk in a shallow dish.

Dredge steaks in flour, then egg, then flour again, pressing firmly.

Heat 1/2 inch oil in large skillet to 350°F.

Fry steaks 4-5 minutes per side until golden. Drain and keep warm.

Pour off oil, add butter to skillet.

Whisk in 1/3 cup flour, cook 2 minutes.

Gradually add milk, whisking constantly. Add white pepper.

Simmer until thick, about 5 minutes. Serve over steaks.

Chef's Comfy Tip

White pepper gives the gravy that classic look and slightly different flavor - but black pepper works fine if that's what you have.
