Ingredients

Shop
  • 4 cube steaks (about 1.5 lbs)
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 eggs
  • 1/2 cup milk
  • Vegetable oil for frying
  • 3 tablespoons flour (for gravy)
  • 2 1/2 cups whole milk (for gravy)
  • Salt and pepper to taste

Instructions

1

Mix flour, salt, pepper, paprika, and garlic powder in a shallow dish.

2

Whisk eggs and milk in another shallow dish.

3

Dredge each steak in flour, then egg mixture, then flour again.

4

Heat 1/2 inch oil in a large skillet over medium-high heat.

5

Fry steaks 3-4 minutes per side until golden and crispy. Remove and keep warm.

6

Pour off all but 3 tablespoons of oil and drippings.

7

Whisk in 3 tablespoons flour and cook 1 minute.

8

Gradually add milk, whisking constantly until smooth.

9

Simmer until thickened, about 5 minutes. Season with salt and pepper.

10

Serve steaks smothered in cream gravy.

Chef's Comfy Tip

The key to crispy coating is making sure your oil is hot enough - test with a pinch of flour, it should sizzle immediately.
