Ingredients
Shop- 6 ears fresh corn
- 4 strips bacon, chopped
- 2 tablespoons butter
- 1/2 cup heavy cream
- 2 tablespoons sugar
- Salt and pepper to taste
- Chopped fresh parsley
Instructions
Cut kernels from corn cobs using a sharp knife.
Scrape cobs with back of knife to get corn 'milk'.
Cook bacon in large skillet until crispy. Remove and set aside.
Add butter to bacon drippings in skillet.
Add corn kernels and corn milk to skillet.
Cook over medium heat, stirring frequently, for 10 minutes.
Stir in cream and sugar.
Cook 5 more minutes until corn is tender and mixture is creamy.
Season with salt and pepper, stir in bacon, and garnish with parsley.
