Ingredients

Shop the tools
  • 6 bone-in pork chops (1/2-inch thick)
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 eggs
  • 1/4 cup milk
  • Vegetable oil for frying
  • 3 tablespoons flour (for gravy)
  • 2 1/2 cups whole milk (for gravy)

Instructions

1

Mix flour, salt, pepper, paprika, and garlic powder.

2

Whisk eggs and milk in a shallow dish.

3

Dredge pork chops in flour, then egg, then flour again.

4

Heat 1/4 inch oil in large skillet over medium-high heat.

5

Fry pork chops 5-6 minutes per side until golden and cooked through.

6

Remove chops and keep warm.

7

Pour off all but 3 tablespoons oil.

8

Whisk in 3 tablespoons flour, cook 1 minute.

9

Gradually add milk, whisking until smooth and thickened.

10

Serve gravy over pork chops.

Chef's Comfy Tip

Pound the pork chops to even thickness before breading - they'll cook more evenly and stay juicier.
