Ingredients

  • 1 1/2 lbs Italian sausage links
  • 2 tablespoons olive oil
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • Fresh basil for garnish

Instructions

Brown sausages in a large skillet over medium-high heat. Remove and slice into 1-inch pieces.

In the same skillet, heat olive oil and sauté peppers and onion until softened, about 8 minutes.

Add garlic and cook 1 minute until fragrant.

Stir in crushed tomatoes, Italian seasoning, sugar, salt, and pepper.

Return sausage to the skillet and simmer 15-20 minutes until flavors meld.

Serve over hot rice and garnish with fresh basil.
