Ingredients
Shop- 1/4 cup bacon grease or sausage drippings
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Instructions
Heat drippings in large skillet over medium heat.
Gradually add milk, whisking constantly to prevent lumps.
Bring to simmer, stirring frequently.
Cook until thickened, about 5 minutes.
Season with salt, black pepper, and cayenne if using.
Serve hot over split biscuits, fried chicken, or pork chops.

The gravy will continue to thicken as it cools, so make it slightly thinner than you want the final consistency.
