Ingredients
Shop- 4 medium russet potatoes, diced
- 1 lb breakfast sausage
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 eggs
- 3 tablespoons vegetable oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
Heat 2 tablespoons oil in a large cast-iron skillet over medium-high heat.
Add diced potatoes, season with salt, pepper, and paprika.
Cook 10-12 minutes, stirring occasionally, until golden and crispy.
Push potatoes to the side, add sausage and cook until browned.
Add bell peppers, onion, and garlic. Cook 5 minutes until softened.
Mix everything together and create 4 wells in the hash.
Crack an egg into each well.
Cover and cook 4-5 minutes until eggs are set to your liking.
Garnish with fresh parsley and serve hot from the skillet.
